Curried Seafood Pie

Curried Scallop, Mussell and Prawn pie.

200 gms of each, scallops, mussels and shelled and cleaned green prawns [ cut the prawns in half ]

1 medium potato sliced into tiny pieces and precooked in microwave.

½ cup peas, and ½ cup sweetcorn, precooked in microwave too

1 brown onion, processed

juice one lemon

1 teaspoon ready made hot mustard

1 teaspoon curry powder

½ teaspoon tumeric

1 teaspoon crushed garlic

1 teaspoon crushed ginger

2 tablespoons chopped coriander leaves

1 teaspoon cornflour mixed in ½ cup water

1 tablespoon cream

1 tablespoon olive oil

Salt to taste

Marinate scallops, mussels and prawns in lemon juice

heat up olive oil in a non stick fry pan

Add onions ginger and garlic. sauté for a while, add the curry powder and tumeric and mustard. if too dry add a bit more oil. Cook till the onions are nearly cooked. Turn the heat up.

When hot add the seafood with the lemon juice

cook for 3 minutes then add cooked potatoes, peas and sweetcorn

Add salt to taste and cook for a little while.

Add the water and cornflour

Should be a nice thick sauce. You can add a bit more water if its too thick

add the cream and coriander and take off heat

Let cool before putting in a pie plate or small pie plates lined with the pie pastry that I wrote earlier, brush the rims with egg wash, cover with thawed puff pastry, brush with egg wash, make a slit in middle and bake in a hot oven 200 degrees for 20 minutes or till golden brown.
