Bhujal bhaat
Reccipe for bhujal bhaat, or fried rice, Indian style
Already cooked rice or if you want veggies in it cook sweetcorn and peas with rice.
To do that you’le need to put the frozen veggies in the boiling water, cover and let it come to boil, then put in 1 cup of rice and let that come to boil. Stir and just turn down the heat a little bit. Let boil for ten minutes, stirring occasionally.wwhen ten minutes is up drain the rice in a colander and rinse with cold water.put back in pot, Cover aand put back on the lowest temp for another ten minutes, let stand for 5 to 10 minutes before use.
Now to fry the rice youlle need,
2 heaped tablespoons of light margarine
1 good nob of butter.
2 clopves garlic crushed
1 large br. Onion, sliced
1 stick of cinnamon broken in 2
4 or 5 cloves
1\2 teaspoon of cardamon seeds
salt to taste
in a large non stick frypan melt the butter and margarine. The temp should be medium hot.put in sliced onion and stir fry for a minute. Add the spices and lastly add the crushed garlic. Do not add the garlic first as it will burn and be bitter. Fry the onions for five minutes or so or till they start to brown.
Turn the heat down and add the rice or rice and veggies. And stir to coat rice with cooked onion and butter juice . add salt to taste. It should smell quite aromatic.
n.b. if you are cooking separate vegie dish for the curry have the rice plain but if you are making curried prawns or garlic prawns then rice with sweet corn and peas are very nice.garlic prawns and curried prawns rcipies follows.
